100gms Fresh Turmeric (Kachi haldi)
2 tbsp Ghee
1 tsp Cumin seeds
1 Green chilli
4-5 Curry leaves
2 cloves
1/2 inch Cinnamon
1 Green Cardomom
1/4th cup Green peas
1/2 cup Curd
1 tsp Red Chilli powder
1 tsp Cumin-coriander powder
1/2 tsp Garam masala powder
Pinch of Asafoetida
1 tbsp Ginger Garlic paste
Directions
- Peel, wash and grate turmeric.
- Ground Cinnamon, Cloves, Cardomom and Black peppercorns.
- Prepare a paste of Ginger and Garlic.
- Add red chilli powder,cumin-coriander powder and garam masala powder.
- Boil peas.
- Meanwhile, Heat ghee in a pan.
- Add Cumin seeds, grounded masala, ginger-garlic paste, curry leaves, Asafoetida and Green chilli.
- Add grated turmeric and cover and cook on low flame for 10-12 minutes until the turmeric softens.
- Add prepared curd and some water and cover and cook for 2-3 minutes.
- Add boiled peas and salt and cook for 2 minutes more.
- Sabji is ready to eat.
- Serve hot with Rajathani moti roti, Phulka or Bajre ki roti.
