Ingredients

  • Rice Preparation
  • 2 Cups Parboiled Rice

  • salt as required

  • 1 inch Cinammon

  • 1 Bay Leaf

  • 3-4 Cardamom

  • 4 cloves

  • For Marination
  • 1 cup curd

  • 2 sliced onion(fry and make brown onion)

  • 2 green chillies

  • 2 green Onions

  • 2 Green Garlic

  • 4 Garlic Cloves

  • 1/2 inch Ginger

  • Salt as Required

  • 1 tsp Turmeric

  • 1 tsp Red Chilli Powder

  • 1 tsp Cumin-Coriander Powder

  • Some Mint Leaves

  • 4 cloves

  • 1 inch Cinammon

  • Jackfruit Preparation
  • 500 gm Jackfruit

  • Salt as Required

  • 1/2 tsp Turmeric

  • 1 tsp Red Chilli Powder

  • 1 tsp Cumin-Coriander Powder

  • 2 tsp Gram Flour(Besan)

  • Few Strands of Saffron(Kesar)

Directions

  • Rice Preparation
  • Add 5 cups of water in a vessel and allow it to boil.
  • Add all the spices and soaked Rice. (Rinse and soak rice for atleast half an hour.)
  • Cook till the rice is 90%done.
  • Strain and keep it aside.
  • Jackfruit Preparation
  • Take jackfruit in a bowl and add all the spices, flour and little water.
  • Deep fry in hot oil till the jack fruit is cooked.
  • Keep it aside.
  • For Marination
  • Take curd in a bowl.
  • Add all the spices, barista, ginger-garlic paste and fried Jackfruit.
  • Lastly add 2 Green chilles. (Slit from between)
  • Assembling Biryani
  • Heat 1 tbsp Oil in a vessel.
  • Add Cumin seeds and allow it to splutter.
  • Add the 1st Layer. (Half of the Jackfruit)
  • Add 2nd Layer. (Half of the Rice)
  • Add 3rd Layer (Remaining Jackfruit)
  • Add 4th Layer (Remaining Rice)
  • Pour 1 tbsp Oil and some rice water.
  • Cover and cook on a low flame above an iron tawa for atleast 15-20 minutes.
  • Let it sit for 10 minutes.
  • Open and serve with Raita, Pickle and Papad.
