- For Boondi
1 cup Gram Flour (Besan)
3/4th cup Water
Few strands of Saffron
Oil for Frying
- For Sugar Syrup
1 cup Sugar
1/2 cup Water
Few strands of Saffron
powder of 4 Cardomom
8-10 Pistachios
Directions
- Take all the ingredients for Boondi in a bowl and make a lump free batter.
- In a kadhai, heat Oil or Ghee for frying Boondi and pour the batter using the perforated ladle.
- Fry till Golden. Don’t make them crisp. (Ensure the flame is medium)
- If boondis are not fine, then add to mixer jar and grind them on pulse.
- Now for Sugar syrup add all the ingredients and make a syrup of 1 string consistency.
- Add the prepared boondis and cook for 3 minutes on low flame.
- Add chopped Pistachios, Switch OFF the flame and allow it to rest for 10 minutes.
- Let it cool down, but not completely. Grease your hands with ghee and start making Ladoos.
Top with pista or silver leaf.

Notes
- Ensure the sugar syrup is of 1 string consistency.
- While frying, make them golden but not crisp.
